Tour Overview

Hand-roll the pearls to create the extraordinary Sturgeon Collagen Pearl Milk Tea.

Experience cooking with this living fossil sturgeon fish, making cooking this precious ingredient easy!

Experience the joy of fishing every day as a fisherman in this ecological sightseeing fishery nestled between mountains and water.

Qianhu Legend's Fisherman's Country Kitchen not only teaches you how to cook sturgeon, but more importantly, allows you to understand the characteristics and details of sturgeon, learn about the history of aquaculture in Taiwan, and learn about the lives of fishermen, understanding that every bite of food should be treated with respect. Come to Sanxia for a day of enjoying the natural beauty of the stream, while experiencing the joys of holding a large fish and learning about fishermen.

- Farm Introduction | Sanxia Qianhu Legend Ecological Farm -
Qianhu Legend Ecological Farm is located near the Manyueyuan National Forest Recreation Area in Sanxia District. It is located at a low altitude near the confluence of the Laka and Zhongkeng Rivers, upstream of the renowned Dabao River in northern Taiwan. The river exhibits the appearance of a juvenile valley, with sharply cut terrain and clear, fast-flowing water, creating a vibrant and ever-changing landscape. Because the farm is nestled between mountains and water, the owner uses clear, cold mountain spring water to raise rare species such as duck-billed sturgeon, sturgeon, trout, and alpine perch. Sturgeon, a living aquatic fossil, and the unique duck-billed sturgeon can be seen on the farm. In addition to developing delicious royal-grade sturgeon dishes using local ingredients, visitors can also enjoy the streamside and the greenery of the mountains in the summer.

Special Ingredient: Sturgeon:
The sturgeon is considered a friend of the dinosaurs, having lived for over 200 million years. Its protection isn't based on scales, but on bony plates and a smooth texture. Two hard bony plates each on its abdomen and chest, plus one on its back, make up a total of five. These five plates support the sturgeon, making it as strong as a vine. Despite its massive size, its meat is surprisingly tender. Its unsaturated fatty acids are three times higher than those of other fish, and it's high in protein, low in fat, and rich in collagen.

- Cooking Class | Fisherman's Time in the Three Gorges Mountains -

1. Sturgeon Braised Pork Rice: Using sturgeon fillets and pork belly, use the simple three-step process of cutting, frying, and stewing to create a traditional Taiwanese braised pork rice in just one hour. The sturgeon's gelatinous properties neutralize the greasiness of the pork belly, eliminating the need for a day-long stew. The rice is fragrant and full of sturgeon gelatin.

2. Dry-Seared Sturgeon Fillets: The most challenging aspect of pan-frying fish is preventing it from sticking to the pan. Using a variety of heat control techniques, including low, medium, and high, and simple tips, you can pan-fry the fish to a crispy skin, tender meat, and sticky gelatinous texture. Every bite is incredibly satisfying.

3. Sturgeon Collagen Pearl Milk Tea: Originating in Taiwan and renowned worldwide, pearl milk tea is surprisingly easy to make yourself. Huamei teaches you how to make pearls at home, pair them with seven-leaf gall tea, add rich Taiwanese fresh milk, and finally add sturgeon collagen, which sounds strange but is actually fishy and odorless. Your mouth will be filled with the chewy pearls and the aroma of brown sugar and fresh milk, a taste that will be unforgettable for a long time.
