Stop 3: Fukumitsuya
Fukumitsuya is the oldest sake brewery in the Kanazawa area, boasting nearly 400 years of history. They have long used Yamada Nishiki, a rice brewery contracted with rice farmers, and "centennial water" from underground. This "centennial water" refers to rainwater from sacred peaks and Mt. Hakusan, which seeps through layers of shells and reaches Fukumitsuya's grounds over a period of centuries. This mineral-rich water contributes to the sweet, refreshing sake they produce.
This tour offers tastings of three newly brewed or seasonal sakes. The flavors of this century-old establishment have captivated gourmets from around the world.
Interestingly, Fukumitsuya not only brews sake but also develops cosmetics using the rice fermentation techniques developed during their brewing process!
